On New Year’s Day, I had a remarkable experience at Third Wave Coffee where the barista treated me to a journey through coffee’s ancient roots. Rather than a standard brew, they used a manual method to create an incredibly clean and flavorful cup that honored traditional coffee history. As the coffee brewed, the barista shared the legendary story of Kaldi, the 9th-century Ethiopian goat herder who discovered coffee after his flock began "dancing" from eating wild red berries. It was the perfect blend of modern craft and 1,200 years of history, using a specialized filtration technique to highlight the pure, bright notes of the ancient beans.
