If you are actively seeking a fast-tracked admission to the nearest gastroenterology ward, look no further than The Great Kebab Factory at the Radisson Blu, Ahmedabad. What is billed as a premium dining experience at a reputable hotel is, in reality, a masterclass in catastrophic kitchen negligence. Dining here is not a culinary journey; it is a high-stakes game of biological roulette. The disaster commenced with a soup so profoundly tasteless it could only be described as hot, textured water. It set a grim baseline that was immediately followed by the beverages. In an era where modern dining standards demand complex, artisan non-alcoholic beverages and carefully aerated craft mocktails, we were served what can only be described as aggressively colored sugar syrup. It lacked any botanical nuance, refreshing acidity, or flavor balance, tasting exactly like a melted cheap lollipop hastily stirred into lukewarm tap water. Then came the signature kebabs, exposing a kitchen that has completely abandoned all fundamental principles of professional operations and basic temperature control. The Chicken Tangdi and Chicken Malai Tikka arrived alarmingly raw. We are not talking about a slight under-rested center; we are talking about poultry so dangerously under-fired it practically needed a veterinarian rather than a garnish. The complete lack of precision and basic roasting technique was staggering. Somehow, the culinary brigade managed to sink even lower with the Galauti kebabs. A proper galauti requires immense skill, delicate handling, and careful presentation to showcase its famously luxurious, melt-in-the-mouth texture. The Veg and Mutton Galauti kebabs served to us bypassed mere poor execution and crossed directly into the realm of severe food safety violations. Both versions were undeniably stale and outright rotten, carrying an unmistakable odor and a muddy, sour flavor profile that strongly suggested they had been languishing in a malfunctioning walk-in refrigerator for days. In a functional, well-run kitchen environment, a competent Sous Chef or Chef de Cuisine would immediately halt service upon seeing this level of hazard leave the pass. Here, however, the kitchen staff seemed entirely oblivious to the culinary crimes they were committing. When questioned, the chefs displayed a shocking lack of knowledge about the very menu they were cooking, entirely unable to explain their own ingredients or marinades. Escalating this nightmare to the manager yielded absolutely no course correction. Serious complaints about being served raw and rotting food were met with vacant nods, a total lack of urgency, and zero improvement in the subsequent dishes. There was absolutely no operational command on the floor. This was not merely a bad dinner; it was a total collapse of basic hospitality, culinary standards, and hygiene. One star is awarded solely because the platform's constraints prevent me from leaving zero. Save your hard-earned money, preserve your gastrointestinal tract, and avoid this establishment entirely unless your evening itinerary involves checking directly into a hospital bed. We recently visited The Great Kabab Factory at Radisson Blu, Ahmedabad, and had a buffet for 9 people with both veg and non‑veg options. The food was great overall—kebabs were flavorful, the biryani was tasty, and the veg section was well handled too. Service was prompt and courteous, and the seating was comfortable for a group. Ambience is modern and classy, making it a good choice for family dinners and small gatherings. Would recommend if you’re in the mood for good North Indian and Mughlai flavours.
