Instead of getting into details about the food stuff that is ceaselessly superb and splendid, I have decided today to speak about something that is scarcely ever talked about. – Plating @ JW.
I am convinced that we all are informed of the word ‘Plating ‘which is essentially the art of arranging, decorating, and presenting foodstuff in a manner that enhances and enriches its aesthetic appeal to the diner when it is served.
To me the most critical and crucial points to be considered while plating a dish are selection of an appropriate plate with an apt colour that augments the visual effect of the dish being served. Portion served must be small in size with creating height on the plate and essentially playing with textures and colours is artistically managed.
And what an immense picture I witnessed today while Brochette and Salmon Steak were served! Both items served were well balanced, served with simplicity and yet the key ingredients were well highlighted. Chef Nitin’s creative effort was unquestionably astonishing.
The Spread was enormous as always with each and every item cooked to perfection with beyond compare taste and flavours. The Show Stealers, however, were Poached Pear, Poached Fish Salad, Tofu Hunan Style, Chicken in Black Bean Sauce, and Wok Tossed Asian Greens with Garlic.
Personally speaking I always avoid Shahi Tukda as I always find it greasy, heavy and never ever crispy but Chef Bhurlal’s creation simply surprised me. Palak Kofta with Bajri Paratha was likewise excellent and exceptional as well. Yes… Bhuralal is great with realistic rural cuisine in particular Rajasthani.
Finally a cup of warm Cappuccino was the obvious preference and Mayur obliged and whatever had been relished settled down wonderfully.
The Service was first-rate as always and I must extend my sincere thanks to Migma, Vinay and Nijam.
