What a fantabulific day it has been. The Mrs., Sudha and me were at Buland Shukla’s office to discuss the way forward on our rammed earth home. And when we were done, he insisted that we stay back and sample the food from his new food outlet at For The Record - Vinyl Bar. And for once, I was left wondering what I liked the most of all that he’d placed before us..To start with we had the Jalapeño Bites. This has whole jalapeños that are scooped out and stuffed with fermented hot sauce and cream cheese! This is then layered with sourdough bread crumbs and fried crisp. Delightful crispy exteriors with melt in the moth insides. And this came with a dip of house fermented mustard and garlic mayonnaise! Trés bien! (Pics 1,2 & 3).We then cleaned out the divinely spicy Pide! A Turkish boat shaped flat bread with an enchanting combination of cheddar, fresh mozzarella, bacon and jalapeños! Leziz! (Pics 1,4 and 5).Next was the turn of the Kismoor Fritters! This had a topping of miso yogurt with toasted sesame and parsley on dried prawns and coconut encased in a black eyed beans which was then pan friend. Mast! (Pics 1 and 6).The Neopolitan Pizza was just awesome with its thin crust and a well endowed and chewy cornicione. What I loved about this pizza was the simplicity of it all. With plum tomatoes, some fermented hot sauce, fresh mozarella and some extra virgin olive oil. Molto bene! (Pics 1 a f 7).And after that the piece de resistance was the Chocolate Tart. A delicate almond crumble shell with a dark chocolate lava followed by some salted caramel sauce and topped with dark chocolate custard cream. And to top all this are some slices of lacto fermented grapes that add a hint of tart to this tart! (Pic .And yes there was some great fresh beer from the tap too. (Pic 9).Want to experience some good old fashioned fermented food, that you’ve never tasted anywhere else before - head to For The Record - Vinyl Bar.
