Kathal biryani had very hard kathal pieces. Not soft at all.

I am much fond of your Hyderabadi biryanis! My experience of Lucknow is not so good. I have a couple of suggestions:
i would be happy if you introduce a kilo handi for mutton baryani as well. I have to order two handis for a kilo biryani. While I liked the taste, I found that in one half Kg handi there were only bones--of the four pieces, three were bones, and two only bones. Biryani full of bones becomes useless. I think if you would temper your handis evenly, particularly when they are quite expensive, that would make our experience even better, and only cost you perhaps a fraction more.
I have no such complaints as far Chicken biryani goes, both in terms of taste and chicken in it.
