The worst biriyani is a disaster on every level. The rice is overcooked into a sticky, soggy mess, clumped together without any fragrance. Instead of the rich aroma of spices, it smells bland or even burnt. The meat is either undercooked and chewy or so dry it feels like cardboard, with no trace of marination. Oil floats on top, making it greasy and unappetizing, while the masala tastes raw and unbalanced. No saffron, no freshness, just dull, tasteless rice with random chunks of disappointment.
