Alchemy Chancery Pavilion is one of those rare places where craft, character, and atmosphere come together effortlessly. Every beer here has its own personality—I’ve loved every pour I’ve tried. The New England IPA is beautifully smooth and expressive, while the Belgian IPA strikes that perfect balance of depth and complexity. You can tell real thought goes into their brewing. The rooftop ambience is truly out of this world—open skies, great energy, and the kind of setting that makes you want to slow down and stay longer. The food absolutely holds its own. The crispy calamari is maaad—perfectly fried, addictive, and impossible to stop at just one bite. And the Mysore Pak Cheesecake? Hands down the best dessert I’ve ever had—rich, indulgent, and brilliantly executed. A true showstopper. A special mention (and a heartfelt request): once upon a time, they served a Mosambi beer, and it was absolutely unforgettable—fresh, vibrant, and unlike anything else in the city. It’s genuinely missed. Would love to see it make a comeback someday. Alchemy isn’t just a brewery; it’s a place you keep returning to—for the beer, the vibe, and the memories.
