By now, I've bought pasta three times from Square Ruth. And you guys (if you do read your own restaurant's reviews) can get it right if you just remember that 1) pasta needs to be al dente (have bite and not be soft and overcooked), 2) pasta should not be swimming in sauce; it should only be coated in sauce (but not dry). And 3) you need to ensure that the sauce has the right balance of flavour to create a wholesome and satisfying dish when mixed with the pasta. For tips, do watch The Pasta Queen YouTube channel on how to make authentic Italian pasta. It's quite simple. You can of course substitute with cheaper ingredients (like processed cheese) instead of the expensive cheeses and olive oils she uses.
