In summer he sources water-rich Totapuri mangoes from nearby orchards, blitzing them to order so the pulp never browns; once the monsoon arrives he pivots to velvety custard-apple and papaya blends, lightly sweetened so the fruit’s own sugars shine. A short griddle doubles as the “Fast Food” side of the menu: buttery aloo-masala sandwiches crisped on an iron press, paneer tikka rolls wrapped in paper-thin roomali roti, and—for late-night travellers—steaming plates of Maggi tossed with green chillies and onions.
