ANothing truly captures the essence of wazwan like the real thing. Sure, the namda we sat on was Kashmiri, but beyond that, it barely scratched the surface of what Kashmiri cuisine is all about. Having grown up eating wazwan, I can confidently say this wasn’t even close. From the Marchwangan Korma to the Waaze Kokur and Methi Maaz — everything seemed to be built on the same base. The Gushtaba and Yakhni especially were disappointing — the Yakhni, in particular, was completely off. It didn’t taste even remotely like the real deal. It’s a nice effort, but this isn’t the proper introduction to Kashmiri cuisine. The depth, balance, and complexity that make wazwan so unique were sadly missing here.
