The waiters are not trained to explain the dish. How could they? Grill republica Shillong,s idea of smoked is not curing and enhancing flavour but adding chilly paste to food to make metaphorically smoke come out of you. Food tried by me and my friends was smoked chicken momos which is not labelled spicy in menu card but in obscure chalk board outside the door. The smoked chicken momos were simply steamed momos tossed in chilly paste of inferior quality. Chillies are flavours too not just heat. Anyways the manager claimed people loved the heat in momos. Then why not simply order steamed momos and pour chilly paste over it!

Friendly Staff and great food. Tried the pork belly, traditional smoked pork, smoked chicken and barbecue chicken. Loved the first three, the barbecue chicken was smothered in a lil too much barbecue sauce but overall the meat were not overcooked and was juicy and flavoursome. Love chilly so loved the fact that the spiciness was spot on.
