And when one says chettinadu, biryani comes to the mind.. Yes Copper Kitchen Restaurant serves one of the best chettinadu " dum biryani's" in namma ooru at HSR Layout . Made of long grained Basmati and each grain screaming out the mild masalas. Exquisite dum, as the aroma and the flavor of the biryani confirm once on the table.
Tried the mutton shoulder biryani here, though the regular dum biryani variants are available here... The mutton shoulder biryani has an entire piece first dum cooked, then slightly cooked in tandoor and then pan fried with a host of chettinad spices and then placed over a bed of the biryani rice...
Coming to the mutton, we are mostly familiar with the mutton raan and mutton ribs as premium cuts.. M the mutton shoulder by far beats both of them with its silky smooth texture and the way it absorbs the masalas and retains the juices. Pair it with the dum rice and they're a winner together.
Priced at 990 and goes well for three moderate eaters is a must eat...!!!
Wrap up the meal with a bread halwa... Delicately sweetened and made fresh...
Started the meal with a chefs special mutton ribs chettinadu soup... And will give it a 5 star. The disclaimer on the menu card sid that it's best for cough and cold and yes... It worked... What a beautifully created soup in local robust flavors.
The chettinadu prawn thokku again wasn't over loaded with pepper and curry leaves as most of the places do... Such intricately spiced, the slight tinge of sweetness from the prawns still prevailed as the other spices took over the dish.
This place is magic... And deserves a visit for the chettinadu cuisine totally..
