A blend of good food, some innovation, a bit of gimmickry and a very reasonable price (3000+ taxes for an eight course tasting menu). The carnival bites were the most innovative, and among those, the pani pur semifreddo stood out - it bursts in the mouth where the cold temperature and the flavours work wonders. Bao bhaji is more mundane, with a bhaji stuff bao. So it is a spectrum. Kala khatta was a salad done on the table, again using liquid nitrogen. Good, but not great. Maybe reduce the kale and the arufula volume? Kombdi rasa was fabulous with perfectly flavoured rasa. Same is true of the crab krapow, served in a dish shaped as crab. I was looking forward to the much hyped recardo negro, but not sure it lived up to the hype. The flavour of the mutton wasn't as intense as I expected it to be - I am not talking about the chilli heat here. Champaran duck carnitas were good with perfectly cooked duck, but the table side service was pointless. Saffron and parmesan khichdi had nice flavours but they need to underplay the saffron a bit - it is a very overpowering thing, and subdues all other flavours. Carnival Celebration dessert was all gimmick. Lot of show but, in the end, a very ordinary chocolate dessert. So much so that we ordered another dessert from the a la carte menu - aam sutra, with mango foam and mango sorbet, and uniquely textured coconut rasmalai, which was better. Aam Sutra would be even better with something that adds crunch/crispiness for a variety in texture. As far as Carnival Celebration is concerned, I am fine with all tamasha if at the end of it, I get a mind-blowing chocolate dessert. ( We wanted to book at TresInd, but it is closed for renovations so we had to settle for Carnival by Tresind. Also, a restaurant where supplies are being dragged through the hall, Chef Sarfaraz and along with someone just chatting around in casuals, slightly stained aprons of the chefs live dishes - these aren't things that should happen in a high end restaurant. Maybe we missed Tresind!). Food: 4 Service: 5 Atmosphere: 4 Price per person: ₹2,000+
