A warm cake is very delicate and fragile. Cooling allows the fats to solidify and the starches to fully "set" (gelatinize), making the cake strong enough to handle, move, and layer without breaking. The most critical reason! If the cake is warm, the residual heat will melt the butter or other fats in the frosting (especially buttercream), causing it to become runny, lose its shape, and slide right off the sides of the cake.
