Thank you Mr. Bangkokwala, for sharing this, and we are deeply sorry.There is no justification for finding a hair in something served from our kitchen and for you to have experienced this for what you have shared is the second time makes this considerably more serious. We completely understand why this has affected your trust in Bahār, particularly when you have been coming to us since our early days.Hygiene and responsible food handling have never been protocols we follow merely because they are expected of us. They have been fundamental to how we have operated from our very first day in 2023. Our kitchen team works with hairnets alongside bandanas/head coverings, gloves where required, and defined food handling practices. However, stating those measures does not diminish what happened to you. The food was served by us, and therefore the responsibility ultimately remains ours.Following this incident, we have undertaken a thorough review not only within our kitchen, but across every possible point of contact, including our bakery and the vendors supplying our fresh produce and leafy vegetables. The concern and photographs/details have been shared with the relevant parties, and additional, more minute protocols are being implemented across our own team and those associated with the food we serve. This is not about passing responsibility elsewhere; it is about being transparent while investigating every possible source and ensuring that accountability results in action.We are equally sorry that our response on the day came across as casual. Saying that we “would have been more careful had we known” appears to have been poorly expressed. Care and hygiene should never depend upon remembering a previous incident or knowing which guest experienced it. They must be consistent for every person, every plate and every day. On that, you are absolutely right.We also recognise that protocols behind the scenes cannot undo what you experienced in front of you.Perhaps what saddens us most is knowing that we have lost the trust of someone who genuinely enjoyed coming to Bahār. We cannot ask you to immediately restore that trust, nor would it be fair to expect you to. We’re sorry that the croissants did not entirely meet your expectations.We would just like to clarify one aspect regarding our Strawberry Chocolate Croissant. Being a dessert croissant, its texture is naturally on the softer side once filled, particularly because of the fresh strawberry compoté and Belgian chocolate ganache. We do not use strawberry jam, chocolate syrup, or synthetic/artificial substitutes in this preparation. The chocolate used for our ganache is Callebaut Belgian chocolate, which we also use across our mochas and chocolate preparations at Bahār, alongside Valrhona for select hot chocolates.Since your order was taken away from the café, we completely understand that the filled croissant may have softened further by the time it was consumed, and we’re sorry if that translated into a texture that felt soggy. We would, however, like to reassure you that the croissants, compoté and ganache served were all fresh.Taste, texture and expectations are ultimately very individual, and while we may respectfully clarify what goes into our food, we equally value how it was experienced by you.
