Ordered From Zamato – Bikkgane Biryani As a hardcore biryani lover, I approach every plate with a lot of respect—and equally high expectations. Kolkata Biryani:. Bikkgane’s Kolkata biryani comes fairly close to the soul of what Kolkata biryani is celebrated for: the presence of aloo and egg alongside the meat. That signature element is there, which is appreciated. However, the execution feels slightly off. The potato and egg seem to be boiled separately and added later, rather than being cooked together with the rice in dum. Traditional Kolkata biryani derives much of its charm from the way the aloo slowly absorbs the aromas and flavors during the dum process. Here, the separation in cooking is noticeable and takes away from that integrated, melt-in-the-mouth experience. Lucknowi Biryani:. The Lucknowi biryani, unfortunately, falls short on its most defining trait—aroma. Authentic Lucknowi (Awadhi) biryani is known for its delicate fragrance, tender meat, and subtle spices, more like a refined, aromatic pulao than a masala-heavy preparation. This version leans more towards a Mumbai-style, masala-forward biryani, reminiscent of the “Lucky” style, rather than the light, perfumed elegance that Lucknowi biryani is famous for. To be clear, my intention is not to criticise but to contribute. Main ek hardcore biryani lover hoon—mera irada kisi ko neecha dikhana nahin hai. Agar kahin thodi kami mehsoos hoti hai, toh woh sirf isliye batata hoon taaki usse aur behtar banaya ja sake. With a little more attention to traditional techniques, dum cooking, and regional authenticity, Bikkgane has the potential to elevate these biryanis from good to truly memorable.
