    There is a marked difference, for me, at least, between the presentation at the Friday night market at Hilltop and the actual facility in town, and I think it's a management issue. We went to the restaurant after being charmed at the market and ended up with an inferior product. When I addressed the issue at the market, too much time was spent trying to convince me I was wrong, and explaining that pork contains fat. My point remains that the belly I bought at the market did not come with half an inch of molten fat. My wife was sick for days, and I had a bad episode, too. Keep the standard consistent between both facilities, and Smoke will be in the top 1% of eateries in Goa. Oh, and don't deny the experiences of your customers. Take the criticism like you do the compliments. It is not personal. I don't know you, but I do want to sample the best you can do again.
