Traditionally, it's served with a rich, spicy coconut-based gravy, usually made with chicken or mutton, accompanied by Goan local bread (pão). The gravy, known as "ros" or "ras" in Konkani, is the vital element that adds the spark. As a vegetarian, I couldn't experience the "ros".
